This colorful black bean salad cools your palette with a refreshing combination of cucumber, strawberries, and creamy feta, followed by a kick of jalapeno. Quick and easy with no cooking required; this salad can be made ahead of time, allowing the flavors to really shine.

Ingredients: 

1 Can black beans
1/2 medium sized cucumber, chopped ~4.5 OZ
6 ounces strawberries, sliced ~13 small berries
1 jalapeno, sliced
1/4 cup fresh cilantro, chopped
1 tablespoon honey
juice of 1/2 lime
1/2 cup crumbled goat cheese feta

Directions:

In mixing bowl combine black beans, cucumber, strawberries, jalapeno, and cilantro. Add honey and squeeze in lime juice. Mix well and top with crumbled feta. Let sit about 10 minutes before serving.
