Summer ended rather abruptly in our neck of the woods – we were hit with official last day of Summer on August 23rd and BAM! There were pumpkin spiced lattes on every menu at every coffee shop. It was Fall before we even had a chance to order one last summery tea or blended iced coffee. While the air has grown significantly cooler from what is was just a week ago, it is still warm and sunny, allowing those unwilling to let go of the summer take advantage of these dwindling daylight hours and warm summer moments.
This bunch over here at Social Club Dinner falls into that category of, “summer lover” and we aren’t fully ready to order a hot pumpkin spiced latte. For some reason, it’s like once you order that 1st PSL, you can’t go back – fall is in full swing and your committed to hot coffee drinks for the rest of the year. So in order to get that sweet spiced pumpkin satisfaction without the dedication, we’ve created the perfect pumpkin spiced smoothie. Ideal for getting a taste of fall, but still a satisfyingly cool and frothy drink suitable for these in-between months.
1/4 cup pumpkin puree
1 small banana
1 cup almond milk
2 tablespoons almond butter
1 scoop whey protein powder, vanilla flavored
2 teaspoons vanilla
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
Combine all the ingredients in blender and blend until smooth. Makes two servings. *Serving Suggestion* Top with whipped cream and sprinkle with cinnamon.
